Meaty spanish rice
Description:
Better than the restaurant side dish, this spanish rice is filled with meat and veggies to make a satisfying main meal. You can also experiment by adding all kinds of veggies like corn, red/orange peppers, etc.

Ingredients:
1 cup raw rice (not instant)
2 Tbs. oil
1 small onion, chopped
1 medium green bell pepper, chopped
1 cup stewed tomatoes with green peppers
2 tsp. salt
2 tsp. (or more to taste) chili powder
2 cups hot water
1 lb. ground beef
Ready In:
1 hour
In a large skillet, carefully brown the rice in hot oil, stirring constantly until rice is yellow, not dark brown and scortched. Brown ground beef in seperate pan. Add beef, tomatoes, peppers, onions, salt and chili powder to rice. Add hot water to cover. Cover pan and simmer gently until tender, approx. 45-50 minutes. Remove cover and let stand until rice dries.
