Quiche
4 eggs, beaten
1 1/2 cups grated Jack Cheese
1/2 cups cooked bacon
1/4 cup green pepper or mushrooms
Preheat oven to 350
Mix ingredients and pour into a pie crust
Bake at 350 for 40 minutes
Let cool and serve
"Special K" Peanut butter balls
7 cups Special K Cereal
1 1/4 cup white sugar
1 1/4 cup white Karo syrup
1 1/2 cup crunchy peanut butter
1 tsp vanilla extract
Butter for hands
Heat sugar and white Karo syrup over medium heat until dissolved. Remove from heat, add peanut butter and stir until incorporated, then add vanilla. Pour mixture over cereal gradually and stir until cereal is evenly coated. Butter hands lightly and form into 2" balls while mixture is still warm and pliable. Place on wax paper until cool.
Italian Artichoke Dip
1 pkg. (8oz) cream cheese
1 pkg. (4oz) shredded Italian cheese blend (or parmesan, asiago, to your taste)
1/2 cup mayonnaise
1 can (14 oz) artichokes, drained and chopped
1 can (2 1/2 oz.) sliced green olives, drained (optional)
3 cloves garlic, minced
In a medium microwave safe bowl, heat cream cheese in 15-second intervals until softened. Add remaining ingredients and stir until combined. Scrape mixture into a small baking dish. Bake at 400* for about 25 minutes or until browned and bubbly.
